Ingredients

  • 2 cups All-Purpose Flour
  • 1 tbsp Baking Powder
  • 0.5 tsp (2.5g) tsp Baking Soda
  • 1/2 tbs Salt
  • 1/4 Cup Granulated Sugar
  • 1/2 Cup Cold Butter (Cubed)
  • 1 Cup Sourdough Discard (Cold is fine)
  • 1/2 Cup Milk (Any Kind)

The Filling

  • 6 tbsp Butter Softened
  • 1 cup Brown Sugar
  • 2 tbsp Cinnamon

The Glaze (3-Minute Recipe)

  • 4 oz Cream Cheese (Softened)
  • 2 tbsp Butter Softened
  • 1 cup Powdered Sugar
  • 1/2 tsp Vanilla Extract

The Secret Sauce

  • ½ cup Heavy Whipping Cream To pour over before baking

Instructions

  • The "Biscuit Grind" (5 Mins)

Preheat oven to 400°F (200°C). In a large bowl, whisk flour, sugar, baking powder, baking soda, and salt. Add the COLD cubed butter. Use a pastry cutter or your fingers to smash the butter into the flour until it looks like coarse crumbs (this creates flaky layers, just like a biscuit).

  • 2. The Liquid Mix (2 Mins)

Make a well in the center. Pour in the Sourdough Discard and milk. Stir gently until just combined. Do not overmix! If you overwork this dough, it will be tough, not fluffy. It should look shaggy.

  • 3. Roll & Fill (8 Mins)

Dump the dough onto a floured counter. Knead it gently 3-4 times just to bring it together. Roll it into a 12x15 inch rectangle. Smear the softened butter all over. Sprinkle the brown sugar/cinnamon mix edge-to-edge.

  • 4. Cut & Pack (5 Mins)

Roll it up tight into a log. Cut into 12 even rolls (Use dental floss for a clean cut!). Place them in a greased 9x13 pan. They can touch slightly, but give them room to expand.

  • 5. (Crucial Step!)

Pour the Heavy Cream into the gaps between the rolls. You don't need to garnish the tops, just fill the spaces. Pro Tip: Warm the cream in the microwave for 30 seconds first. If you pour ice-cold cream onto the dough, it can shock the oven temperature and hinder the rise. This cream will thicken into a caramel sauce and steam the dough.

  • 6. Bake & Glaze

Bake for 20-25 minutes until golden brown. While hot, whisk the Glaze ingredients together until smooth and slather over the warm rolls.

The Sourdough Archive Overnight Method

  • Mix & Knead: Combine your ingredients until a soft dough forms.
  • The Long Rest: Place the dough in a greased bowl, cover with a damp cloth, and let it sit on your counter for 8–10 hours (overnight).
  • The Morning Reveal: By morning, the dough will be puffy and smell slightly tangy—this is the sign that the wild yeast has done its job!
  • Roll & Bake: Roll out, add your cinnamon-sugar filling, and bake until golden

Notes

Variations

  • The Classic Glaze: A simple mix of powdered sugar, vanilla, and a splash of milk.
  • Cream Cheese Frosting: Best for that high-end bakery feel.
  • Orange Zest: Add fresh orange zest to the filling to highlight the natural tang of the sourdough.

Troubleshooting: Why aren't my rolls fluffy?

Since we aren't using yeast, the "fluff" comes from chemical reactions.
  1. Old Baking Powder: If your baking powder is older than 6 months, it might be dead. Test it in hot water (it should fizz aggressively).
  2. The "Tough" Dough: This is a biscuit dough, not a bread dough. If you knead it like pizza dough, you develop gluten, which creates a rubbery texture. Treat it gently.
  3. Cold Cream: If you pour ice-cold cream on the rolls, it can shock the oven temp. Microwave the cream for 30 seconds so it's lukewarm before pouring.
  4. Why do my rolls taste bitter?

Bitter taste = unreacted baking soda. This happens when:
    1. OLD BAKING SODA (over 6 months) — loses potency
    2. YOUNG/WEAK DISCARD (under 12 hours old) — not acidic enough to react fully
    3. COLD DISCARD straight from fridge — reduced acidity

    FIXES:
    • Use discard that's peaked (actively bubbly, freshly fed, room temperature)
    • Replace baking soda if it's over 6 months old (test: mix 1 tsp soda + 1 tbsp vinegar; should fizz vigorously)
    • Use the CORRECTED amount: 0.5 tsp baking soda (not 1 tbsp)
    • If you still taste bitterness, add 1 tbsp vanilla extract to the glaze
