The Wet Mix

  • 1 cup 240g Sourdough Discard (unfed, straight from the fridge)
  • 2 large eggs room temperature
  • ½ cup 115g Unsalted butter, melted and slightly cooled
  • ¼ cup 60g Sour cream or Greek yogurt (This is the secret to the "Moist" claim)
  • 1 tsp Vanilla extract

The Dry Mix

  • 2 cups 250g All-purpose flour
  • ¾ cup 150g Granulated sugar
  • 2 tsp Baking powder
  • ½ tsp Baking soda
  • ½ tsp Salt

The Fold-ins & Topping

  • 1 ½ cups Fresh blueberries tossed in 1 tbsp of flour so they don't sink
  • 2 tbsp Demerara or Sparkling sugar for that bakery-style crunch on top

Instructions

  • Preheat & Prep: Preheat your oven to 425°F (218°C). Line a standard muffin tin with paper liners. Pro-tip: Fill every other muffin well to give the tops more room to expand outward.

  • Whisk Dry: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

  • Mix Wet: In a separate medium bowl, whisk the sourdough discard, eggs, melted butter, sour cream, and vanilla until smooth.

  • Combine: Pour the wet ingredients into the dry. Fold gently with a spatula until just combined. Do not overmix—the batter should be thick and slightly lumpy.

  • The Blueberries: Gently fold in the flour-dusted blueberries.
  • The Scoop: Divide the batter into the 12 muffin cups. Fill them all the way to the top (this is how you get those "Baker Style" muffin tops). Sprinkle the tops generously with the sparkling sugar.

The Bake (The Magic Step)

  • Place muffins in the oven at 425°F for 5 minutes.

  • Without opening the oven door, lower the temperature to 350°F (175°C).
  • Bake for an additional 15–18 minutes or until a toothpick comes out clean.

  • Cool: Let them sit in the tin for 5 minutes before moving to a wire rack.

Notes

1. The "Temperature Shock" Method (Crucial)

The reason bakery muffins are tall is that they are hit with high heat immediately. This causes the baking powder and the air in the sourdough discard to expand rapidly before the crust sets. Do not open the oven door when you lower the temperature to 350°F, or you will lose that precious steam.

2. The Sourdough Discard State

  • Age: You can use discard that is up to 2 weeks old. The older the discard, the more "tangy" the muffin will be.
  • Temperature: Cold discard from the fridge is actually preferred here! It keeps the butter from melting too quickly in the batter, leading to a fluffier crumb.

3. Prevent the "Blueberry Bleed"

If using frozen blueberries, do not thaw them. Toss them in a tablespoon of flour while still frozen and fold them into the batter at the very last second. This prevents your muffins from turning entirely purple/grey.

4. Don't Overmix (The "Lumpy" Rule)

The most common mistake is mixing until the batter is smooth. For baker-style muffins, stop mixing as soon as you see no more streaks of dry flour. A lumpy batter creates those irregular, craggy tops seen in the photos.

5. Variation

If you want, mix the wet and dry ingredients (except the baking powder, soda, and berries) the night before and let it sit in the fridge. This "long-ferments" the flour. In the morning, fold in your leavening agents and berries, then bake.

6. Substitutions

  • Sour Cream: Can be replaced with Full-Fat Greek Yogurt for a protein boost.
  • Butter: For a lighter, more "open" crumb, you can use neutral oil (like avocado oil), though you will lose that rich buttery flavor.

7. Storage & Freezing

  • Room Temp: Store in an airtight container with a paper towel on top to absorb excess moisture (keeps the tops crunchy). Best for 2 days.
  • Freezer: These freeze beautifully. Wrap individually in foil. To reheat, pop in a 350°F oven for 5-8 minutes to restore the "crunchy" top.
