What Makes Neapolitan Pizza Different?

Neapolitan pizza is known for its soft, airy crust, light center, and distinctive leopard spotting around the rim. Unlike many American pizza styles, Neapolitan pizza relies on high heat, simple ingredients, and proper fermentation rather than excessive toppings.

While traditional recipes use active sourdough starter or commercial yeast, sourdough discard can also create excellent results when handled properly. If you’re new to discard pizza recipes, start with our complete sourdough discard pizza dough guide.

Why Sourdough Discard Works for Neapolitan Pizza

Sourdough discard contributes flavor, fermentation byproducts, and improved browning characteristics. Although it lacks the activity of a freshly fed starter, it still adds complexity that many pizza makers prefer.

If you’re unsure whether discard or active starter produces better pizza, compare sourdough discard vs active starter pizza.

Best Flour for Neapolitan Sourdough Discard Pizza Dough

Most Neapolitan pizza makers prefer Italian 00 flour because it produces an exceptionally extensible dough and delicate crust texture.

Hydration Matters

Neapolitan pizza dough generally performs best between 65% and 70% hydration. Higher hydration promotes oven spring and larger air pockets but requires more experience during shaping.

If hydration percentages seem confusing, read our guide to sourdough hydration explained.

Cold Fermentation Improves Flavor

A long cold fermentation helps develop flavor and improves extensibility. Most Neapolitan pizza makers ferment dough for at least 24 hours before baking.

How to Stretch Neapolitan Pizza Dough

Neapolitan dough should be stretched gently by hand rather than rolled. The goal is to preserve gas bubbles that create the characteristic airy rim.

Baking Neapolitan Pizza in an Ooni

High temperatures are essential for authentic results. Most Neapolitan pizzas bake at stone temperatures between 750°F and 850°F.

How to Get Leopard Spotting

Leopard spotting comes from a combination of fermentation, hydration, flour selection, and high heat. Most home ovens cannot consistently produce the same results as a dedicated pizza oven.
